2 Desserts You Can Make with Biscotti

Biscotti is almost a dessert in and of itself. However, if you have wholesale gourmet biscotti on hand, you may get a little bored with just snacking on it as-is. Here are a couple of desserts you can make with biscotti to kind of shake things up and enjoy it in a new way.

Whipped Delight

This dessert is sort of like a parfait in a pan. Kids like it as much as adults, and it is made with simple ingredients. You'll need:

  • 1 large box of instant pudding mix in the flavor of your choice
  • 2 1/2 cups milk
  • 4 ounces cream cheese
  • 1 cup whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups crumbled biscotti
  • 1/4 cup melted butter
  • 2 tablespoons granulated sugar

Begin by mixing the crumbled biscotti with the butter and granulated sugar. Spread the mixture into a 9 x 13 inch baking pan. Bake the crust at 350 degrees F for 10 minutes or until it appears light brown. Remove the crust from the oven, and let it cool completely while you prepare the pudding mixture. 

To make the pudding mixture, combine the cream cheese, milk, and pudding mix. Use a hand mixer to beat it for 4 minutes or until thick and smooth. Spread this mixture over a completely cooled crust. Then, prepare the whipped cream by combining the heavy cream, powdered sugar, and vanilla. Beat until thickened; do not overwhip, or you will get butter! Spread the whipped cream over the pudding layer. Chill in the fridge for an hour, and serve.

Chocolate, Peanut Butter, and Biscotti Parfaits

This recipe is for an actual parfait, but with a twist. The peanut butter, chocolate, fruit, and biscotti come together in a way that will remind you of a peanut butter and jelly sandwich. For two parfaits, you'll need:

  • 2 biscotti of your choice, crumbled
  • 1 chocolate bar, cut into chunks
  • 1/2 cup heavy whipping cream
  • 2 tablespoons peanut butter
  • 1/2 cup sliced strawberries
  • 1/4 cup chocolate syrup

Whip the cream until stiff peaks form. Then, stir in the peanut butter until you have a uniform mixture. Layer the biscotti, peanut butter cream, berries, and chocolate chunks into the parfait glasses, aiming to create two layers of each ingredient. Top with chocolate syrup, and enjoy!
