Strawberry Kiwi Balsamic Dressing
If you love balsamic vinegar dressings, then this is one sauce you really need to make with your extra strawberry kiwi jam. It's amazing on a green salad, especially if that salad contains some crumbled blue cheese and red onions! To make about a cup of dressing, you'll need:
- 1/4 cup balsamic vinegar
- 1/4 cup strawberry kiwi jam
- 1/3 cup olive oil
- 1 tablespoon prepared honey mustard
- 1/8 teaspoon kosher salt
- 1/8 teaspoon garlic powder
Combine all of the ingredients in a large bowl. Whisk briskly for about 2 minutes, or until the dressing appears uniform. Pour over your salad, and store any leftovers in your refrigerator.
Strawberry Kiwi Barbecue Sauce
The flavors in strawberry kiwi jam happen to pair wonderfully with the spicy and vinegar notes typically seen in barbecue sauce. This barbecue sauce is unique enough to turn heads, but not so strange that anyone will give you the side-eye. To make about 2 cups of barbecue sauce, you need:
- 1/2 cup strawberry kiwi jam
- 1/2 cup ketchup
- 2 tablespoons molasses
- 1/2 cup apple cider vinegar
- 2 tablespoons minced garlic
- 2 tablespoons minced onion
- 1 tablespoon olive oil
- 2 tablespoons brown sugar
- 1/4 teaspoon kosher salt
- 1/4 teaspoon cayenne pepper
Combine the garlic, olive oil, and minced onion in a saucepan. Saute for about 3 minutes, or until the garlic and onion are tender, but not brown. Add the remaining ingredients to the saucepan. Bring the mixture to a low simmer, and simmer for just 2–3 minutes or until the brown sugar dissolves.
This barbecue sauce is lovely on pork and chicken. You can brush a thin layer of it on your meat while the meat is still on the grill.
